This is Lubhaya Ram Aam Papad Wale, a name whispered among Amritsar’s culinary connoisseurs. The owner beckons me closer, a wiry man with a mischievous grin. “Start with the darker papads,” he advises, “They’re the sourest! Then move on to the golden ones – those are sweeter”.
I select a sliver of dark, almost brownish papad. As it melts on my tongue, a jolt of sourness explodes, followed by a lingering sweetness. The thin papad shivers, then shatters, revealing a burst of spices, sharp and unexpectedly refreshing.
