Vada Pav Essentials

Garlic Coconut Chutney

  • Ingredients: Garlic, coconut, red chili powder, salt.
  • Method: Fry garlic in oil, toast coconut until golden. Blend with chili powder and salt for a spicy, dry chutney.

Green Chutney

  • Ingredients: Cilantro, green chilies, garlic, cumin, lime juice, optional sugar.
  • Method: Blend all ingredients, adding water as needed, to make a smooth, tangy paste.

Tamarind Chutney

  • Ingredients: Tamarind paste, water, jaggery, sugar, salt, red chili powder, cumin powder, ginger powder.
  • Method: Mix all ingredients, boil until thickened. Cool down to thicken further.

Vada (Potato Patties)

  • Ingredients: Boiled potatoes, ginger, garlic, green chili, mustard seeds, curry leaves, hing (asafetida), turmeric, salt, cilantro, chickpea flour, baking soda, water.
  • Method:
    • Mash boiled potatoes, temper with spices, ginger, garlic, and chili.
    • Form into balls.
    • Make batter with chickpea flour, turmeric, salt, baking soda, and water.
    • Dip potato balls in batter, deep fry until golden.

Assembling Vada Pav

  • Ingredients: Pav (buns), butter, prepared chutneys, fried vada.
  • Method:
    • Toast pav with butter.
    • Apply chutneys inside each pav.
    • Place fried vada between the buns.
    • Serve hot with extra chutney.
